Beet, Avocado and Microgreens Salad

This is an easy dish to make, looks beautiful and it is delicious!  You can find already cooked beets in most supermarkets.   I am attaching a couple of pictures of some I find in my local store.   You can also use canned beets, but check the ingredients and sodium content. Serves 4

 

Ingredients

  • 2 large cooked beets
  • 2 ripe avocados
  • 2 cups microgreens
  • 2 Tablespoons feta cheese
  • 2 Tablespoons balsamic vinegar
  • 1 Tablespoons olive oil
  • Salt & pepper (optional)

Directions

  1. Cut beets and avocado in wedges.
  2. Arrange the wedges in a circle on each plate.
  3. Add 1/2 cup of microgreens in the middle of the circle.
  4. Top with 1/2 Tablespoon feta cheese
  5. Drizzle with olive oil and balsamic vinegar.
  6. Add salt and pepper if using.
  7. Enjoy!
