Beet, Avocado and Microgreens Salad
This is an easy dish to make, looks beautiful and it is delicious! You can find already cooked beets in most supermarkets. I am attaching a couple of pictures of some I find in my local store. You can also use canned beets, but check the ingredients and sodium content. Serves 4
Ingredients
- 2 large cooked beets
- 2 ripe avocadoes
- 2 cups microgreens
- 2 Tablespoons feta cheese
- 2 Tablespoons balsamic vinegar
- 1 Tablespoons olive oil
- Salt & pepper (optional)
Directions
- Cut beets and avocado in wedges.
- Arrange the wedges in a circle on each plate.
- Add 1/2 cup of microgreens in the middle of the circle.
- Top with 1/2 Tablespoon feta cheese
- Drizzle with olive oil and balsamic vinegar.
- Add salt and pepper if using.
- Enjoy!
