This wholesome, make-ahead parfait combines creamy high-protein yogurt, nutrient-rich chia pudding, fresh berries, and crunchy granola. Each layer brings a different texture—creamy, fruity, and crisp—making it a satisfying and balanced breakfast or snack.
It’s easy to prepare ahead of time and store in the refrigerator, making it a great option for busy mornings.
Makes: 1 parfait
Prep Time: 10 minutes
Chill Time: At least 3 hours for the chia pudding
Storage: Up to 3 days refrigerated
Equipment
- 2-cup bowl with lid
- Whisk
- Container or jar for layering the parfait
- Cutting board
- Knife
Ingredients
Chia Pudding
- 1 cup unsweetened almond milk
- 3 tablespoons chia seeds
Barefoot Nutrition Note: Look for an unsweetened almond milk with a short ingredient list. We like Elmhurst Unsweetened Milked Almonds.
Parfait
- ¾ cup high-protein yogurt, such as Greek or Icelandic yogurt
- ⅓ cup prepared chia pudding
- 1 cup mixed berries
- 2–3 tablespoons granola
Instructions
Prepare the Chia Pudding
- Combine the almond milk and chia seeds in a bowl and whisk thoroughly.
- Let the mixture sit for 5 minutes.
- Whisk again. Some chia seeds may settle or clump together at the bottom during the first few minutes. Whisking a second time helps separate the seeds and creates a smoother, more evenly textured pudding.
- Cover and refrigerate for at least 3 hours, or preferably overnight, until thickened.
Assemble the Parfait

- Add a layer of high-protein yogurt to your serving container.
- Spoon the prepared chia pudding over the yogurt.
- Add the fresh mixed berries.
- Finish with 2–3 tablespoons of granola for a crunchy topping.
- Cover and refrigerate until ready to enjoy.
Storage & Meal Prep
The assembled parfait can be stored covered in the refrigerator for up to 3 days.
The berries may soften slightly as they sit, but the parfait will still taste delicious. For the crunchiest texture, you can also store the granola separately and add it just before serving.
Barefoot Nutrition Tip
Choose a yogurt that provides a good amount of protein with little or no added sugar, and use an unsweetened almond milk for the chia pudding.
For granola, look for one made with whole-food ingredients such as oats, nuts, and seeds, and keep the portion to a few tablespoons since granola can be surprisingly concentrated in added sugars and calories.
Why We Love It
This parfait combines several nutrient-dense foods in one easy breakfast. Greek or Icelandic yogurt provides protein, while chia seeds contribute fiber, omega-3 fatty acids, and healthy fats. Fresh berries provide fiber and naturally occurring antioxidants, and granola adds a satisfying crunch.
The combination of protein, fiber, and healthy fats can also help make this parfait more filling than a traditional yogurt-and-granola breakfast.
