  • 4 cups fresh arugula

  • 2 large ripe tomatoes, chopped

  • 1 can (15 oz) cannellini beans, drained and rinsed (no salt added or low sodium)

  • ¼ cup sliced olives (such as Kalamata)

  • ¼ cup pickled red onions

  • 2 tablespoons pickled red onion juice

  • 2 tablespoons crumbled feta cheese

  • 1 tablespoon extra virgin olive oil​

Directions:
