
Savory Curry Egg Muffins
These protein-packed egg muffins are an easy, flavorful breakfast you can prepare ahead of time. Cottage cheese gives them a creamy texture while adding extra protein, and spinach, peppers, onion, fresh parsley, and a subtle touch of curry provide color, nutrients, and plenty of flavor.

Ingredients

- 10 large eggs
- 1 cup cottage cheese
- 1 cup chopped spinach
- ¼ cup shredded cheese, such as cheddar or Mexican blend
- 2 tablespoons diced red bell pepper
- 2 tablespoons diced red onion
- 1 teaspoon chopped fresh parsley
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon curry powder
Instructions
Preheat the oven to 325°F (165°C).
In a large bowl, whisk the eggs until well combined.
Add the cottage cheese and shredded cheese. Whisk again until incorporated.
Add the salt, black pepper, and curry powder and mix well.
Fold in the spinach, red pepper, red onion, and parsley until evenly distributed throughout the egg mixture.

Line a 12-cup muffin pan with parchment muffin cups. Using a ladle or ice cream scoop, divide the mixture evenly among the 12 cups.

Bake for 25–28 minutes, or until the centers are set and the muffins are cooked through.

Remove from the oven and allow the muffins to cool before transferring them to a storage container.

Storage & Meal Prep
Store the cooled egg muffins in an airtight container in the refrigerator for up to 3 days.
For longer storage, freeze them for 4–6 weeks. For the best texture, transfer frozen muffins to the refrigerator the night before and allow them to thaw overnight.
For a quicker option, microwave a frozen muffin for approximately 1 minute, adding additional time if necessary, until heated through.
